Oysters

Why are oysters coveted and deemed such a luxury food? Historically they were prized by the elites of every society, for their sweet flavour and unique meat.

Oysters are rich in protein and low in fat, oysters have valuable trace minerals like zinc, iron, iodine, copper and selenium. Here in Connemara, the running of the tides twice a day shape the oysters into the tear drop shape that is deemed the best, with a good deep cup that allows the oyster to thrive as it grows.

With a shelf life up to 14 days, the freshness and purity of our oysters means everything to us. Our farm contributes to nature rather than taking anything away. These oysters are farmed naturally, constantly filtering the water and feeding on the phytoplankton of the sea. You couldn’t get more organic if you tried!

It takes three years for us to harvest a mature oyster from the seed. Three years of care and observation, with long days spent at sea, carefully moving oysters from one area to another ensuring they prosper in the quality Grade A waters. What does Grade A water mean? It’s water so clean, the highest grade possible, it means the oyster grown in this water can be eaten from it straight away.

We harvest every week, grading and purifying every oyster on the farm. The journey from seed to plate is intensive and rigorous, with seed moving from calm nurseries to the rough outer waters as they mature. The harsh temperament of the Atlantic provides optimal conditions for the shell to be naturally shaped and produce the finest meat nature can provide. We help the process along by going out and shaking the oyster bags, to get the shape and depth of a great oyster.

Once the oysters are harvested they enter our purifying centre and go through a process of grading, washing, purification and packing. This final leg of seed to plate is closely monitored and we ensure the integrity of the Connemara flavour by using water from the bay and the attention to detail in the packing process is what secures the shelf life.
